New Recipe Sunday: Chili-Spiced Soup with Stoplight Peppers and Avocado Relish
It is frightfully cold here in Kansas today with snow covering the ground and the wind chill in the negative digits. Needless to say, it is perfect soup weather.
Today’s new recipe is the Chili-Spiced Soup with Stoplight Peppers and Avocado Relish from Cooking Light (you can find the recipe here). It is extremely easy to make. Next time I would up the spices and throw in some cayenne pepper to give it more of a bite. However, I have a good feeling this version will be even better for leftovers.

With this being made out of cast aluminum, some probably would not call it an official dutch oven with those usually being cast iron, but this guy is quite light and easy to clean. It works in a similar way as a usual dutch oven would as well. After reading quite a few forums about some having problems with their cast iron dutch ovens cracking their glass-top stoves (and many others saying they had no problem at all), I went with this purchase at Target (here is a link to it), and so far there have been no regrets. Rather, it has become one of my favorite things to use this winter for a wide variety of dishes.
