With the New Year’s Resolution of living on a pre-tax minimum wage budget for this month still in effect ($130.80 is left. I am feeling good about this), I had to go through what I had on hand with the plan to supplement the my supplies with a few things from Dillons. That led to my making meatloaf for the very first time. It is also not just any meatloaf but rather Yes,-Virginia-There-Is-a-Great-Meatloaf Meatloaf.
The recipe is super easy. Following the advice from the reviews, I used less than 1/2 cup of whole milk and added both 1/2 tsp of Worcestershire sauce and (of course) Cholulu Hot Sauce to the meatloaf sauce. The end result was extremely tasty, and this will definitely be made again (there is a slight chance I was just really tired of soup).
The asparagus, which was sauteed in olive oil and then red wine, was an impulse buy thanks to Dillons having it on sale for $1.99 lb. It was also tasty.
Without a doubt, I am looking forward to my leftovers for this week.
