After adventures in three national parks, one national monument, and one national forest plus wonderful chances to see, talk to, and hang out with three amazing friends who have impacted my life in more ways than they will ever know, I have come home from my road trip, which became a spiritual journey of sorts, tired but ready to take on the world with the memories from it floating through my mind.

Looking for something quick and healthy for dinner as I unpacked, did laundry, and tried to put together two IKEA tables, I turned to my dear friend Andrew for the recipe, which was given to him by his dear friend Robi, for his green smoothie he has been having every morning. Andrew’s warning that the recipe may be an acquired taste led to some modifications to make it a bit more palatable. The outcome worked great for this summer evening.

Original Recipe
A Little Bit of Water
A Whole Apple Minus the Core
Kale
Chard (Robi uses Spinach instead)
A Few Stems’ Worth of Parsley and Cilantro (minus the thicker parts of the stem)

Ryan’s Modifications
All of the above except going the Robi way and using Spinach
A Handful of Frozen Blueberries
A Handful of Frozen Raspberries
Three Large Frozen Strawberries
Frozen Beet Shavings
A Banana

Let me begin by saying this definitely took me much longer than 30 minutes to prepare this recipe for the 30-Minute Squash Coconut Curry, but I may have been distracted, and the whole peeling/dicing a butternut squash quickly are still skills I need to refine. However, the outcome was quite tasty, and the warning that this makes a lot is definitely true.

The recipe is pretty easy to follow. Overall, I stuck to it pretty closely except for my adding white onions. They were definitely a great addition. Vegetarian friendly, this is a easy and tasty recipe to have on hand.

And after today, I have officially made it to the year mark of trying a new recipe every Sunday, which also means I have made it to the year mark of being single. In honor of this anniversary, there will be no new recipes for the next two Sundays, but these posts will continue afterward as I try many more new recipes out there and post more often about the adventures taking place.

Armed with some zucchini and an onion from the always amazing Reno County Farmers Market, I started looking specifically for different ways to use zucchini other than the usual grilling, sautéing, baking with parmesan cheese, etc. and found this tasty and easy recipe for Zucchini Lasagna to try this Sunday.

Following the advice of the person who posted the recipe, I doubled the garlic and the ground beef. I also doubled the cheese mixture because I couldn’t resist. Furthermore, there may have been some exaggeration to the sprinkling the cheese on top. Although the sauce still seemed to be lacking a little something (I substituted whatever that was with hot sauce and crushed red peppers), the outcome, though, was still definitely worth the whole heating up the house in order to bake this recipe.
